However, if you want to level-up your grilled cheese with a fancified (but uncomplicated) recipe, this is where you are meant to be!
The bottom line is, asiago cheese is just superior to most other cheeses, especially compared to those plastic-wrapped singles we all started our grilled cheese journeys with. This recipe is just as quick and easy to make, but it tastes sooo much better! Let’s get into it!

Asiago Grilled Cheese Recipe
Here’s a list of what you’ll need to make this yummy recipe:
- Bread
I really like this Sara Lee Artisan Bread.
- Blocks of Cheese
I buy a block of Vermont White Cheddar and a block of Asiago. Freshly shredded cheese is the only way to go! Shred and mix the two together for a perfect combination.
- Butter
- Mayo
Don’t believe me? Wait til you try it on your grilled cheese! I prefer Duke’s or Kraft Mayo.
You’ll also need a cheese grater. I have a traditional style, but really want one of these rotary ones. If you have one of these already, please let me know how you like it!
Steps for Making Asiago Grilled Cheese
Step 1
Heat up your pan or griddle on a medium setting. Shred your blocks of cheese.
Step 2
Spread mayo on your bread. (I put it on both slices.)
Add cheese on the mayo and gently push the two slices of bread together, with the cheese and mayo in the middle, forming a sandwich.
Step 3
How long have we been spreading butter on the outside slices of bread? This is a waste of time (especially if you’re making several)! Put a pat of butter in your pan or on your griddle and spread it around.
Place your sandwiches on the cooking surface. You may want to cover it with a lid (or cookie sheet if using a griddle) to help heat up the middle of the sandwich so the cheese gets super melty.
Step 4
Once the bottom side of your sandwich is golden brown (or your desired level of browning) carefully flip your sandwich over with a spatula and cook until this side is browned to your liking.
Step 5
Transfer grilled cheese sandwiches to a cutting board and slice in half, if desired.
