 2 Slices of Bread
 ¼ cup Shredded Vermont White Cheddar Cheese
 ¼ cup Shredded Asiago Cheese
 1 tbsp Butter
 1 tbsp Mayonnaise

Heat up your pan or griddle on a medium setting. Shred your blocks of cheese.

Spread mayo on your bread. (I put it on both slices.)

Add cheese on the mayo and gently push the two slices of bread together, with the cheese and mayo in the middle, forming a sandwich.

How long have we been spreading butter on the outside slices of bread? This is a waste of time (especially if you’re making several)! Put a pat of butter in your pan or on your griddle and spread it around.

Place your sandwiches on the cooking surface. You may want to cover it with a lid (or cookie sheet if using a griddle) to help heat up the middle of the sandwich so the cheese gets super melty.

Once the bottom side of your sandwich is golden brown (or your desired level of browning) carefully flip your sandwich over with a spatula and cook until this side is browned to your liking.

Transfer grilled cheese sandwiches to a cutting board and slice in half, if desired.
